Wilton Benitez is an expert coffee grower with over 26 years of experience in the field, including 16 years specializing in high-quality, specialty coffee. He owns and operates Granja Paraíso 92, a family farm located in Piendamó, Cauca, Colombia. The farm is renowned for its innovative farming techniques, including terraces, drip irrigation, and laboratory-based nutrition management, which together ensure the production of exceptional coffee. Granja Paraíso 92 is fully equipped with a processing plant, microbiology lab, and quality lab, enabling the farm to produce unique and standardized coffee profiles. Wilton’s expertise in processing, along with his custom-designed equipment and machinery, allows him to offer coffees with distinct and high-value flavour profiles.

Variety Information

The Castillo variety, cultivated at 1900 meters above sea level in the Cauca region of Colombia, is a well-regarded coffee type known for its resilience and rich flavour profile. At La Macarena farm, under the expertise of Wilton Benitez, this variety is nurtured to highlight its distinctive tasting notes of sugar cane, dried fruit, chocolate, and berries. With a Specialty Coffee Association (SCA) score of 86, the Castillo variety from La Macarena delivers a balanced and smooth cup, combining sweetness with subtle fruit and chocolate undertones. This makes it an excellent choice for those who appreciate a well-rounded and flavorful coffee experience.

Process Information

The processing of the Castillo variety at La Macarena farm, which is processed at Granja Paraíso 92, employs a traditional washed method to bring out the coffee’s clean and crisp flavours. The process begins with carefully selecting and washing coffee cherries to remove impurities. Following this, the cherries undergo pulping to remove the outer fruit layer, leaving the beans covered in a mucilage layer. The beans are then fermented and thoroughly washed to eliminate the mucilage, ensuring a smooth and clean taste.
