Introduction:
The Chemex isn’t just a coffee maker; it’s a piece of art. With its elegant design, this iconic brewer has been a staple in kitchens and museums alike since 1941. It brews a clean, flavorful cup that highlights the floral and citrus notes of your coffee.
What You Need for 1 Cup
- Chemex
- Chemex Filter
- Grinder
- 18 grams of Travesia Coffee
- Hot Water Just Off the Boil (about 205°F)
- Scale
- Timer
- Mug
Brewing Time: 3 minutes
Steps:
1. Prep your Chemex and Preheat:
Place the filter in the Chemex with the thicker side against the spout. Rinse it with hot water to seal it in place and remove any paper flavour. Dump the rinse water.
2. Grind and Measure:
Grind 18 grams of coffee to a medium-coarse consistency, like sea salt, and add it to the Chemex. Center the coffee and zero out the scale.
3. Bloom:
Start your timer and pour 40 ml of hot water over the grounds. Let it bloom for 45 seconds, ensuring all the grounds are saturated.
4. First Pour:
At 0:45, pour 140 ml of water in a steady spiral, bringing the total to 200 ml. Make sure the water is evenly distributed over the coffee bed.
5. Second Pour:
At 1:15, pour the remaining 100 ml to reach a total of 300 ml.
6. Let It Brew:
Allow the coffee to finish brewing, which should take around 3:00 to 3:45 minutes. Once done, lift the filter and discard it.
7. Serve and Enjoy:
Give your Chemex a gentle swirl, pour the coffee into your favourite mug, and enjoy a clean, crisp brew!
